Hmmmm...Good point. I have never looked at it that way. On the other hand, a rubber stamp is usually only *one* component of a project. The final product is altered greatly depending on the other stamps used, the type of paper(s) used, the coloring technique(s), the overall color scheme, the kind of ink(s) and the embossing powder(s) used, etc. In some of the swaps I have participated in I am amazed at how the same image can be used in seemingly infinite ways. I can understand how someone could copyright a card or some other project. I believe that reproducing the entire project without expressed permission would be violating an artist's personal expression. I would like to see a rubber stamping copyright violation case make it to court. When push comes to shove, I really don't think that the devil companies could make their argument stick. As far as we're concerned, Phil, I guess we just have to agree to disagree. So you know, I don't share this with just ANYBODY! :) Here are some of my most popular Cheesecakes. I hope you enjoy them! They are not for the timid! Please let me know what you think!! Joy Here is a compliation of some "research" I did. I had to - 'cause I hate to tell you this - but; I get a perfect cheesecake every time. Here are some things I came across: 1. Wrapping the pan with foil keeps it watertight. 2. If you grease the sides of the pan first, the surface will not crack when the cake starts to shrink on cooling. (It always shrinks a little). 3. Chill thoroughly before unmolding. In fact, I make my cheesecakes one day ahead of serving and leave it in the springform till I'm ready to use. 4. The water bath pan must NOT be higher than the springform pan or it will slow down baking. Also, put no more than 1" of water in pan. 5. Check oven temperature for accuracy. 6. When done, turn oven off, DO NOT OPEN DOOR, let sit for one hour. Then remove, place on a rack, and let cool to room temperature (about 1 hour). Cover with plastic wrap and refrigerate overnight. 7. Use Philadelphia brand cream cheese. It is the best and works EVERY time. 8. IMPORTANT: Use the egg size specified. If none is specified, use large (not jumbo or extra-large). BAILY'S IRISH CREAM CHEESECAKE CRUST----------------------------------- 1 1/2 pk Graham crackers, crushed 6 ea Butter, melted 1/3 c Sugar MIX AND PAT INTO BOTTOM OF SPRINGFORM PAN BAKE AT 350 FOR 10 MINS - ----------------------------------FILLING---------------------------------- 24 oz Cream cheese, unwrapped And softened in a microwave On high 5 ea Jumbo eggs separated 1 1/2 c Sugar 2 ea Env. knox gelatin 3 tb Cocoa 1/2 c Bailey's irish cream 1 ea Pt. whipping cream Soften gelatin in small saucepan with 3/4 cup water. Stir egg yolks into 1 cup sugar. Add to gelatin mixture and cook over med. heat. stirring constantly until mixture thickens and bubbles. Cool. Beat cheese in large bowl until light and fluffy. Add cocoa and beat again. Add Bailey's and beat some more. Slowly add gelatin mixture an blend well. Beat egg whites until soft peaks form. Add remaining 1/2 cup sugar and continue beating until stiff peaks form. Fold into cheese mixture. Whip cream and fold into cheese mixture. Pour into crust and refrigerated several hours or overnight. May be frozen, sliced, then dipped in chocolate for better than a Dove bar treat! FOR THE BROWNIE BOTTOM--------------------------- 8 tb Butter or margarine,1 stick 4 Squares (1 oz.each) Unsweetened baking chocolate 1 1/2 c Sugar 2 Eggs 1/4 c Milk 1 ts Vanilla 1 c Flour 1/2 ts Salt - ------------------------------FOR THE TOPPING------------------------------ 3 pk Cream cheese,softened 8 oz. Each 3/4 c Sugar 1 ts Vanilla 3 Eggs 1/2 c Sour cream Heat oven to 325 deg. Lightly grease and flour a 9" springform pan.Set aside. Prepare the cake: Melt butter and chocolate in 3 qt. heavy saucepan over low heat,stirring constantly; remove from heat and cool mixture to lukewarm. Add sugar and eggs,one at a time,mixing well after each addition.Blend in milk and vanilla.Stir in combined flour and salt,mixing just until blended. Spoon into prepared springform pan,spreading evenly.Bake 25 minutes. Remove cake from oven while you prepare the topping. Prepare the topping: Beat cream cheese and vanilla at medium speed with electric mixer until well blended.Add eggs,one at a time,mixing well after each addition.Blend in the sour cream;pour over brownie bottom (filling will almost come to top of pan).Bake 55 to 60 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake;cool before removing rim of pan.Refrigerate 4 hours or overnight.Let cake stand 30 minutes at room temperature before serving.Makes 12 servings... CHO. RASPBERRY CHEESECAKE GREAT!!!!!!!!!! 1 9 oz package chocolate wafer cookies 3 T butter melted 12 oz Semisweet choc chips 1 C heavy cream 3/4 C Raspberry jam 2 8 oz packages cream cheese, softened 3/4 C sugar 4 Eggs 2 t vanilla Instructions: Grind cookies to a fine powder, mix with the butter and press into the bottom and up the sides about an inch of a 9" springform pan (or 2 7" pans). Refrigerate while making the filling. Combine the chips and cream in a microwave safe bowl and heat at high for 3 to 4 minutes or until smooth. Stir every minute. Mix in the jam, stirring until disolved, let cool 10 minutes Mix the creamcheese and sugar until smooth. Add the eggs, one at a time, mixing well after each egg. Add the vanilla and the chocolateraspberry mixture. Mix well. Bake 1 1/4 to 1 1/2 hours at 325 or until cake is set around the edges but still jiggles slightly in the centr. Cool and put in the fridge for at least 6 hours. I typically make it in the 7" pans and get 16 sinfully rich slices per cake CHO. CHEESCAKE Crust: 1 1/2 c chocolate cookie crumbs -- Oreos 4 tbsps unsalted butter -- melted 3 tbsps sugar Filling: 1 1/2 lbs cream cheese -- softened 1 c sugar 3 lg eggs 8 ozs semisweet chocolate -- melted and cooled 1 tsp vanilla Heat oven to 325 degrees. Line the bottom of your springform pan with waxed paper (or do whatever you normally do to keep it from sticking.) For the crust, mix the oreos, melted butter, and sugar in a bowl. Press the mixture onto the bottom of your pan. For the filling, beat the cream cheese, sugar and vanilla until blended. Add the eggs, one at a time, mixing after each addition just until blended. Stir in the chocolate. Pour the filling into the crust and bake for 60-65 minutes or until center is almost set. Note: I always put a pan of water in the oven with the cheesecake -- helps keep the oven moist so the cheesecake is less likely to crack. - - - - - - - - - - - - - - - - - - KEY LIME CHEESECAKE 32 oz Yogurt, lowfat vanilla 1/4 c Sugar 2 T Cornstarch 2 T Key lime juice 2 Egg; lightly beaten Drain the yogurt to make yogurt cheese. This is done by placing a clean piece of cheesecloth or muslin in a colander or lg funnel, then spooning the yogurt into the cloth. Place colander over a bowl, then place in refrigerator overnight. The whey will drain from the yogurt, leaving the yogurt cheese in the cloth. ( special note: make sure that the yogurt doesn't have gelatin or pectin in it--otherwise, you'll NEVER get the "cream cheese consistency" that this recipe calls for. Perhaps better to get plain yogurt--usually an "all natural" brand contains neither the pectin or gelatin--and add some vanilla to it.) Preheat oven to 325 degrees. lightly grease an 8-inch pie pan or 7-inch springform pan. Place yogurt cheese in a mdm-size bowl. Add sugar, cornstarch, and lime juice, mixing gently with a fork or wire whisk until well blended. Stir in the eggs. Pour into the prepared pan and smooth the top with a spatula. Bake until center is set: 25 to 30 minutes for a pie pan, or 55 to 60 minutes for a springform pan. Cool slightly on a wire rack. Refrigerate until chilled. WHITE CHO. CHEESECAKE - ----Crust----- 1 Package Graham Crackers -- crushed 6 Tablespoons Unsalted Butter 2 Tablespoons Sugar -----Filling----- 10 Ounces White Chocolate -- finely chopped 1/2 Cup Heavy Whipping Cream -- at room temperature 1 Pound Cream Cheese -- at room temperature 4 Large Eggs, Separated -- at room temperature 4 Teaspoons Vanilla For the crust: Melt butter. Combine cracker crumbs, butter, and sugar and press mixture onto bottom of 9" springform pan. Bake at 350 degrees for 8-10 minutes. When pan has cooled, butter sides. For the filling: In a double boiler, melt chocolate, stirring frequently. Add cream and blend well. Remove pan from water and cool slightly. Meanwhile, beat cream cheese until smooth. Add egg yolks and continue to beat. Add white chocolate mixture, and vanilla. Beat for about 3 minutes. Beat egg whites until soft peaks form. Blend whites into white chocolate mixture. Pour into prepared pan and bake at 350 for one hour. Turn off the oven and leave pan in for additional hour. Chill and serve. New York-Style Cheesecake 1/2 cup graham cracker crumbs -- 4 double crackers 1 cup sugar 2 tablespoons cornstarch 5 packages cream cheese, 8 oz. pkgs. -- softened 2 large eggs 2 teaspoons vanilla 1/2 cup heavy cream 2 ripe peaches, cut in wedges, -- wedges cut in half 3/4 cup blueberries 1/3 cup apricot preserves 1. Heat oven to 350 degrees. Grease an 8-inch springform pan. Sprinkly bottom with cracker crumbs. 2. Mix sugar and cornstarch in a large bowl. Add cream cheese and beat with electric mixer on medium speed until smooth. Beat in eggs with vanilla until blended. Reduce mixer speed to low, add cream and beat until blended. Pour into pan and spread smooth. 3. Bake 1 hour or until a pick inserted near center comes out clean, but center of cake is still jiggly. Cool in pan on a wire rack (cake will set completely as it cools.) Cover loosely and refrigerate overnight or up to 3 days. 4. Up to 1 hour before serving, run a knife around edges of cake and remove pan sides. Mound peaches in a border on top of cake and fill center with blueberries. 5. Melt jam in a saucepan over low heat or in microwave. Stir through a strainer. Brush over fruit.
