Ok.... Here's a recipe a good friend from my previous job gave me. This makes an EXCELLENT vegetarian main dish or you can serve it as a healthful side dish. And, it helps use up the heaps of zucchs you may have at this time of year. Here it is: ZUCCHINI PUFF Serves 6 to 8 Ingredients 3 cups zucchini, unpeeled, chopped into small cubes 1 large onion, chopped 1/2 cup salad oil(sunflower, safflower, corn, etc.) 1 cup Bisquick or other biscuit mix 4 eggs, well beaten 1/2 cup grated parmesan cheese (optional!!) 1/2 tsp salt pepper to taste 2 T fresh chopped dill Pre-heat oven to 350. In a large bowl add zucchini, onion, oil, Bisquick mix and eggs. Stir to blend with a large wooden spoon. Do not beat with a mixer. Add the parmesan cheese, salt, pepper, and dill. Mix well. Butter an oven proof dish or casserole (approx 2 qts or more). Pour in the mixture, and bake for 35-45 minutes. The surface should be lightly golden brown when done. NOTES: We have found that it is very difficult to get the onions to cook in the casserole. So, we saute the onions FIRST before adding them to the mixture. - -- Security is mostly a superstition. Susan Pickering = Rothamel was demoing Perfect Paper Adhesive. She mainily used it a lot = for Collaging. You can use it for just about anything. You can even let = this glue dry and the stamp or emboss on it. She also put the Pearl Ex = (powdered pigment paint) to change the color. It was really impressive. = You can call their number 1-800-200-7848-It's by USArt Quest,they also = sell other stuff that Susan used in collage.
