We chose Moab. We LOVE it here. As a "local" I can always find a secluded place to hike & I haven't even ventured into the mountains. I've been too busy here in the desert. You learn what places to avoid during the height of the season. I honestly feel like I live in Mecca! However, in your case, I think you might want to look into something in San Juan County, or the area over by Escalante-Boulder. These counties have lots of National Forest (Fish Lake NF and Dixie NF)areas that include lots of mountains (with Pine and Quaking Aspen forests), lakes, streams, and hiking areas. Much different than the slick rock of South Eastern Utah. Yet you are still within a few hours of the metropolitan areas of the Wasatch front (Provo, Salt Lake) and Nevada(Las Vegas), a few hours from the National Parks/Monuments (The Golden Circle) of Southern Utah, Nevada, and Arizona [Bryce Canyon NP, Zion's NP, Capital Reef NP, Arches NP, Canyonlands NP, Cedar Breaks NM, Natural Bridges NM, Rainbow Bridge NM, Hovenweep NM, Lake Powell/Glen Canyon N Recreation Area, Great Basin NP (Nevada), Grand Canyon NP (Arizona)].
